Healthy Apple Delight

Hankering for a sweet treat but don’t want to throw in the towel on your meal plan? Fresh baked apples and a Greek yogurt sauce  will maintain your healthy blood sugar levels while giving you a little dessert satisfaction.  Choose your favorite type of apple; just about any kind will work: Granny Smith, Pink Lady, or my favorite, Fuji.  All contain fiber and assist in lowering cholesterol, while delivering powerful antioxidants; MDs recommend eating an apple a day to alleviate oxidative damage and cognitive decline.

Apple Delight Recipe- Serves 2
Ingredients:
1 medium apple, chopped
1 tsp cinnamon
1 tsp Stevia
1/4 tsp vanilla extract
2 tbsp of maple flavored instant oatmeal
6 ounces plain Greek yogurt
1/2 scoop vanilla protein powder
1/4 tsp vanilla extract
2 tsp Stevia
1/2 tsp cinnamon
2 tsp peanut butter or almond butter
2-3 tbsp milk (to thin out slightly)
 
Directions:
Preheat oven to 350 degrees.  Spray a pan with cooking spray.  In that pan, mix your apples, cinnamon, Stevia and vanilla.  Bake for 13 minutes.  Sprinkle with the oats and bake for another 3 minutes.  Meanwhile, mix the Greek yogurt with the remaining ingredients. Layer the yogurt and apples in two bowls.
