Recipe to the Rescue: Peaches N’ Cream “Crepe”

The key to successfully jump starting your day, igniting your metabolism and energizing you through morning workouts is a smart and balanced breakfast.  Here’s an “out of the box” crepe, of sorts, that is gluten-free, chock full of clean protein and contains zero sugar.  The carbs are pretty low, coming only from the little bit of fruit you add to your crepe.  Light, fluffy and an unconventional way to prepare eggs, we here at R.I.P.P.E.D. think this is a peachy-keen way to fire up your day.  Use any fruit that is in season, or simply buy some organic frozen fruit to be used all winter long.  Make no mistake about it, the filling here is creamy and delicious, but contains absolutely no cream or fatty-sugary ingredients.  This is one tasty breakfast that can be enjoyed any time of day (or night!)

Ingredients

  • Olive oil cooking spray or Coconut oil
  • 3 egg whites
  • 1 whole omega-3 egg
  •  1/8 tsp cinnamon
  • 1/2 tsp Stevia
  • 1 tablespoon ground flax
  • 1/3 cup non or low-fat cottage cheese
  • 1/4 cup Coconut-Almond Breeze (or milk of choice)
  • 3 slices fresh or frozen peaches (or 1/3 cup any berry of choice)- thawed or warmed up
  • 2 tablespoons sliced almonds or pecans
  • 1 tsp vanilla extract
  • 1/2 tsp Stevia
  • additional fruit for topping

Directions:

Preheat a large non-stick frying pan on medium heat. Lightly coat with spray. Throw the egg whites and egg, cinnamon, Stevia and flax into a magic bullet (or whisk by hand) and blend for a few seconds.  Pour mixture into the pan. Cook for a couple of minutes until the top of the mixture begins to bubble. Carefully flip the entire crepe  and cook until the other side is light brown. Transfer crepe to a plate. In a small blender,  toss in cottage cheese, peaches, milk, vanilla and Stevia.  Blend until smooth. Place half of the mixture onto one side of the crepe. Fold the crepe over to cover contents. Use remaining “cream” filling over the top.  Sprinkle with nuts and any additional fruit.
