Curry Chicken and Superfood Quinoa

As much as I love to cook, and would make everything from scratch if I had the time, I simply cannot create every meal without the help of some convenience/pre-made items found at the store.  Trader Joe’s hooked me up big-time the other day when I got called last-minute to sub a 4:30 Kickboxing class and realized as I flew out the door that I’d neglected to get dinner started.  I quickly scoured my fridge and saw that I had a fresh pre-marinated curry chicken pack and frozen bag of “Quinoa Superfood with Kale and Sweet Potatoes.”  When I got home at 6 p.m., I was able to get dinner on the table for my hungry little gymnasts by 6:20!  I simply browned up the curry chicken and added some Almond Breeze coconut Almond milk (about 1/2 cup), a little garlic and some agave (maybe 2 tablespoons).  I then poured the entire bag of quinoa in with the chicken and let it defrost.  It lacked something so I threw in 2 handfuls of spinach, 1/4 cup shredded carrot, 1/4 cup dried cranberries, 1 tablespoons of pumpkin butter (mainly to sweeten it and spice it with cinnamon flavor, so you could omit and just use cinnamon) and topped with some bagged honey sliced almonds (all from Trader Joe’s).  My family went bananas!  I had about 2 tenderloins of chicken (4 ounces) 1/2 cup of the quinoa and 2 tablespoons of the sliced almonds.  The flavors were a little bit Indian and a little bit Caribbean, which is where we lived for many years, so it felt like comfort food to me.
