My latest find from Trader Joe’s (Reduced-Guilt Greek Yogurt Guacamole) has gotten me all kinds of excited and inspired. I’m putting it in almost everything…even my tuna salad. So here’s a quick and easy tuna salad to place on top of lettuce that’s a bit outside of the box, and without all the fatty mayo in most tuna salad recipes.
- Tuna Salad with Spice
- Ingredients:
- 1 can tuna, drained
- 6 tablespoons Trader Joe’s Guacamole
- 2 tablespoons Greek yogurt
- 1 tablespoon low, or non-fat mayo
- 1 tsp. lime juice
- Mrs. Dash lime or chipotle seasoning to taste
- 1/2 teaspoon chopped jalepeno
- 1 tablespoon Sriracha hot sauce
- 1/4 cup garbanzo beans
- 1/4 cup red bell pepper, chopped
- 1/4 cup cucumber, chopped
- Brown rice tortilla “chips” (optional) – Simply bake a tortilla at 400 for 10 minutes, or until crisp.
- 4 cups lettuce
- Directions:
- Mix everything together. Divide among two plates. Place over lettuce. Dot extra hot sauce all over. Serve with chips, if desired. Serves 2.
