Tuna Salad with Garbanzo Beans

My latest find from Trader Joe’s (Reduced-Guilt Greek Yogurt Guacamole) has gotten me all kinds of excited and inspired.  I’m putting it in almost everything…even my tuna salad.  So here’s a quick and easy tuna salad to place on top of lettuce that’s a bit outside of the box, and without all the fatty mayo in most tuna salad recipes.

Tuna Salad with Spice
Ingredients:
1 can tuna, drained
6 tablespoons Trader Joe’s Guacamole
2 tablespoons Greek yogurt
1 tablespoon low, or non-fat mayo
1 tsp. lime juice
Mrs. Dash lime or chipotle seasoning to taste
1/2 teaspoon chopped jalepeno
1 tablespoon Sriracha hot sauce
1/4 cup garbanzo beans
1/4 cup red bell pepper, chopped
1/4 cup cucumber, chopped
Brown rice tortilla “chips” (optional) – Simply bake a tortilla at 400 for 10 minutes, or until crisp.
4 cups lettuce
Directions:
Mix everything together.  Divide among two plates. Place over lettuce.  Dot extra hot sauce all over.  Serve with chips, if desired.  Serves 2.
