Blueberry Frozen Yogurt Bites

Time to get your kids in the kitchen!  We’ve gone crazy for blueberries this summer.  I cannot stop thinking about all of the recipes I want to make with these antioxidant jewels.  Today, the kids made protein-packed blueberry frozen yogurt bites.  We mixed a healthy scoop of protein powder into our non-fat Greek yogurt, the skewered our berries, dipped them, and even sprinkled some with almonds and coconut for a little added fat.  The possibilities are endless….use strawberries, top with sprinkles or stir some peanut butter into your yogurt for a PB&J yogurt bite.  YUM!  and FUN!

Ingredients:

1 1/2 cups Chobani (we used vanilla)

1/2 scoop protein powder (we used Cake Batter flavored Protizyme)

1-1 1/2 cup washed blueberries

2 T low fat coconut (optional)

2 T slivered almonds (optional)

1 skewer

 

Directions:

Spear your berry.  Dip and swirl.  Sprinkle with topping.  Lay on a silpat.  Freeze for 1 hour.  Pop and enjoy.
