Greek Yogurt Freezer Dessert Pops

Sometimes, you just get a sweet tooth that won’t go away.  Sadly, dessert and diet do not go hand in hand, which is why I created these slightly sweet frozen treats on a stick that definitely put a halt to the cravings that commonly derail a clean-eating day. The great news is, if you do a little calculating of your own, you can add a few mini chocolate chips in place of the granola, or substitute peanut butter for the coconut.  My version satisfies my mocha-coconut craving, and with the balanced ratios, I can even have two. One 2 3/4 ounce serving is: 100 calories, 9 Protein, 9 Carb, 4 fat.

Ingredients

2- 5.3 ounce vanilla yogurt

1/4 cup skim milk

1 scoop protein powder 

1/4 cup granola (use one with no more than 120 calories per 1/4 cup)

1/4 cup unsweetened coconut

serves 6

 

Instructions

Pour yogurt and milk into a small bowl and stir well while adding the protein powder.  Add then the granola and coconut and mix well.  Divide evenly among six Popsicle Molds, or do what I did and use 3 ounce plastic dixie cups with Popsicle sticks.  The yogurt mix is stiff enough to hold the stick in place, but I cover each little cup with saran wrap or foil and pop the stick right through.  Freeze for at least 3-4 hours.  When you’re ready to eat, just run water under the cup to pop your frozen goodie right out.  You can even reuse the cup!  I soften my kids’ treats in the microwave for 10 seconds.  As you can see, from my oldest to the youngest, these are a big hit!
