Healthy Hot Cocoa

It’s been a little cold and rainy here in So Cal, so when my daughter asked me for hot chocolate the other day, I thought, why not?  But, it wasn’t long before I realized I had no hot chocolate in the house, or anything that resembled chocolate sweetness.  That’s when my 11-year-old said, “mom, just use the protein powder and milk.”  Ahh, a girl after my own heart.  Why didn’t I think of that?!  I decided to doctor it up slightly, and I’m proud to say, it was a winning recipe both my kids and their friends enjoyed.  (That’s always the true test…the FRIENDS).  You see, my kids are used to weirdly healthy alternatives, but most of their friends are not.  My kids will devour my coconut water and lime popsicles and  black bean brownies, but their friends usually proceed with caution.  This week, however, I was the cool mom and produced something that everyone enjoyed, even me, because I knew I pulled one over on the kids once again:)

Ingredients:

2 scoops chocolate protein powder

24 ounces of milk (I used 8 ounces of skim and the rest coconut almond milk)

1 tablespoon cocoa powder

2 teaspoons Stevia

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

Place all ingredients in a blender or magic bullet.  Blend for 1 minute.  Milk will get nice and frothy.  Pour into 2 large mugs and microwave for 1 minute and 30 seconds.  Watch closely because they will overflow if they get too hot.

Serve with 2 tablespoons of fat-free whipped topping.

One cup has roughly 20 grams of protein, 8 grams of carbs and 4 grams of fat.
