Sweet Potato Protein Brownies-G-free

We’ve tried beans in brownies, so why not naturally sweet, vitamin-rich sweet potatoes?!  The baked, cooled and mashed potatoes reduce the need for much flour and sugar.  With just a few ingredients and a one-bowl method of preparation, these simple and healthy brownies are a must-try.

INGREDIENTS:

(Serves 8)

1 cup cooked and mashed sweet potatoes (about 2 small)

1/4 cup almond flour

1/4 cup oat flour

1 scoop chocolate protein powder

3 tablespoons cocoa powder

1/8 cup plus 1 tablespoon granulated stevia (if you like them sweeter, add more)

2 eggs

2 tablespoons almond or peanut butter, or coconut oil

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch salt

ICING:

4 ounces Greek vanilla yogurt

1 tablespoon cocoa powder

1 scoop chocolate protein powder

1 teaspoon stevia

1 tablespoon almond butter (optional)

chocolate chips (optional)

DIRECTIONS:

Preheat oven to 350. In a food processor, whip sweet potatoes until smooth.  Add all remaining ingredients and mix until smooth, about 1 minute.  Pour into a greased 8×8 pan.  Bake for 13-16 minutes.  Pull them out when almost done.  They will dry out if you leave them in too long.  Cool.  Stir topping ingredients together.  Spread on top.
