Breakfast for lunch, or dinner anyone? Most people are pretty set in their ways for breakfast. Busy mornings generally call for un-fussy meals, but you might be tempted to set your alarm clock 15 minutes early just to make this delicious Mexican favorite (or hit snooze and make it for dinner). Either way, your taste buds will be awoken by the different textures and layers of flavor in this super clean, gluten-free and dairy-free recipe. It takes less than 15 minutes to whip it up, and it is perfectly balanced with the correct macro nutrients.
- 1 corn or 1/2 brown rice tortilla
- 1/2 tsp Mrs. Dash Chipotle or Lime flavor
- 1/4 tsp. garlic powder
- 1 whole egg
- 7 tbsp liquid egg white
- 2 tbsp black beans
- 1/2 cup chopped onion
- 1/4 cup chopped tomato
- 2 tbsp salsa
- salt & pepper to taste
OPTIONAL TOPPERS: lettuce, cilantro, jalepeno, perppercinis, siracha, small slice avocado
Directions:
Heat oven to 400 degrees. Spray a silpat baking sheet with cooking spray and lay tortilla down. Spray tortilla and sprinkle with 1/4 tsp of Mrs. Dash seasoning. Bake for 8-9 minutes until crisp. Remove and set aside. While tortilla is baking, spray a pan with Pam and saute the onions for 3 minutes. Add tomatoes, black beans, Mrs. Dash, garlic powder and any other seasoning you like. Remove from pan. Re-spray with Pam. Crack egg and pour in the liquid egg whites. Cook until sunny side up. Spread salsa over the tortilla. Top with onion mixture. Lay egg on top. Garnish with jalapeno, lettuce, olives or a slice of avocado.
